The rind was kind of brittle and did not peel away as I am used to. Very strong with a very earthy tang. We served it once for a party, did not ever get a nice ruffle - sort of a smashed version because the rind just broke.

If you use the special "Giroulle" - a tool that was created by the Swiss specifically for it. This shaves the cheese into fine, thin, pencil-shaving-like threads, which when chewed, allow you to experience the perfection.
Cutting this cheese into "hunks" or "wedges" makes it too difficult to savor. If no "Giroulle" is available. I was obsessed with finding a cheese curler after I saw one a friend had and I liked it so much.
Found it, ordered it expensive and then started the quest for cheese. There are only TWO kinds of cheese recommended for this curler and they are only found in speciality cheese shops or on line and they are VERY expensive And other kinds of cheese do not work.
